Since I was a child, my mother taught me how to do
the pasta that in Emilia Romagna is strictly
hand-made with the rolling-pin which flies quickly on the pasta
using super tested simple movements.
Then, the passion for the cooking took me to examine closely
 the subject attending cooking courses and to get the SFOGLINA certificate
 (typical Bolognese name for the woman who made the hand
made puff pastry) at the “Vecchia Scuola Bolognese” in 2003
with the teacher Alessandro Spisni. Then, I began to do the Bolognese
cuisine courses in my Bed & Breakfast
 
www.accoglientebologna.it , since six years in the centre of Bologna, to simple pasta lovers, but
also to many young teen-agers who are keen on it until they open little schools of the Italian cuisine
in many Japanese towns.
After 4 years, I put myself to the test suggesting in the “DULCAMARA” restaurant
on the Florence hills evenings with typical Bolognese menù.
Certainly, the success I got will make me continue this experience.
In the meanwhile, on December 2007 I have opened my cooking school in Budrio,
 in the quiet of the Bolognese countryside, where now we have also moved the B&B.
 
  
 
SUGGESTIONS FOR BOLOGNESE CUISINE COURSES
 
Our cooking courses included ingredients, the book of receipts and the apron.  
At the end, it’s always included the tasting of dishes.
The cost is per person and it must be paid in advance with postal order or money transfer or
immediately in cash.

lesson 2  -3 hours     the stuffed pasta     tortellini and brodo whit meet  ,
                                  passatelli , zuppa imperiale
               -3 hours     tortelloni with ricotta , ravioli , little course for
                                 aromatic herbs
                                  
                          
lesson  3 -3 hours   the different kinds of pasta ,  strozzapreti whit sausage ,
                                gnocchi whith chestnut and cheese sauce
               - 3 hours   gnocchi with potato and  tomato sauce,
                                Bucaneve pasta stuffing with ricotta and spinac
